Ingredients

2 cups granulated sugar

1 cup packed light brown sugar

1 cup heavy cream

1/2 cup unsalted butter, cut into pieces

1/4 cup light corn syrup

1 teaspoon vanilla extract

Pinch of salt


Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal. Lightly grease.
  2. Combine granulated sugar, brown sugar, heavy cream, butter, and corn syrup in a heavy-bottomed saucepan. Stir.
  3. Heat on medium, stirring frequently, until butter melts and sugar dissolves.
  4. Attach a candy thermometer. Cook without stirring until the mixture reaches 240°F (soft-ball stage).
  5. Remove from heat. Cool undisturbed for 5 minutes.
  6. Add vanilla extract and salt. Beat with a wooden spoon until thick and slightly dull, about 5-7 minutes.
  7. Pour fudge into the prepared pan and spread evenly.
  8. Cool completely at room temperature. Cut into squares and serve.

Notes

Tip: Use a candy thermometer for precision, or test for soft-ball stage in cold water.

For a deeper flavor, substitute dark brown sugar for light brown sugar.

Avoid graininess by ensuring all sugar dissolves before boiling.
