Description

A creamy, flavorful Southern classic, this old-fashioned pimento cheese is perfect for crackers, sandwiches, or a veggie dip. Ready in just 10 minutes, it combines sharp cheddar cheese, creamy mayo, and sweet pimentos into a versatile and crowd-pleasing dish.

Ingredients

2 cups sharp cheddar cheese, grated

4 oz cream cheese, softened

1/2 cup mayonnaise

1/4 cup diced pimentos, drained

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp cayenne pepper (optional)

Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine softened cream cheese and mayonnaise until smooth.
  2. Add grated cheddar cheese, diced pimentos, garlic powder, onion powder, and cayenne pepper (if using). Mix until fully combined.
  3. Taste and adjust seasoning with salt and pepper.
  4. Transfer to an airtight container and refrigerate for at least 1 hour for flavors to meld.
  5. Serve chilled or at room temperature with crackers, bread, or as a sandwich filling.

Notes

For a spicy kick, increase cayenne or add diced jalapeños.

Use roasted red bell peppers as a substitute for pimentos.

This dish is best made ahead to enhance flavor.
