Ingredients

2/3 cup Minute Rice

2 3/4 cups milk

1/3 cup sugar

1 tablespoon butter

1/2 teaspoon salt

1/2 teaspoon vanilla extract

1/4 teaspoon nutmeg

1/2 cup raisins

Cinnamon, for sprinkling


Instructions

  1. Preheat the oven to 350°F (175°C) and butter a 1-quart baking dish.
  2. In the baking dish, combine the Minute Rice, milk, raisins, sugar, butter, salt, vanilla extract, and nutmeg. Mix well.
  3. Bake in the preheated oven for 1 hour, stirring after the first 15 minutes and again when the pudding is done.

Notes

The pudding will thicken as it cools.

To make it dairy-free, substitute milk with almond, coconut, or oat milk, and replace butter with coconut oil or margarine.
