Ingredients
1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper, to taste
3 cups chicken broth
2 cups egg noodles
3 tbsp unsalted butter
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with garlic powder, paprika, salt, and pepper. Cook chicken until browned and cooked through (6–8 minutes). Remove and set aside.
- In the same pan, bring chicken broth to a boil. Stir in egg noodles, reduce heat to medium, cover, and cook for 8–10 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.
- Lower the heat, stir in butter and minced garlic, and cook until fragrant (1–2 minutes).
- Return chicken to the pan and combine with noodles. Sprinkle with Parmesan cheese and parsley before serving.
Notes
For added veggies, toss in spinach, peas, or steamed broccoli.
