Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
1 cup long-grain rice
1 1/2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with garlic powder, paprika, salt, and pepper.
- Sear the chicken for 3-4 minutes per side until browned. Remove and set aside.
- In the same skillet, add the rice, chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Stir to combine.
- Return the chicken to the skillet, nestling it into the rice mixture. Bring to a simmer, cover, and reduce heat to low. Cook for 20-25 minutes until the chicken is cooked through and the rice is tender.
