Description

Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup long-grain rice

1 1/2 cups chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  2. Sear the chicken for 3-4 minutes per side until browned. Remove and set aside.
  3. In the same skillet, add the rice, chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Stir to combine.
  4. Return the chicken to the skillet, nestling it into the rice mixture. Bring to a simmer, cover, and reduce heat to low. Cook for 20-25 minutes until the chicken is cooked through and the rice is tender.
  5. Garnish with fresh parsley before serving.

Notes

For extra flavor, add a squeeze of lemon juice before serving.

You can use chicken thighs instead of breasts for a juicier option.

If you prefer a lighter version, substitute heavy cream with half-and-half or whole milk.
