Ingredients
8 oz bacon, chopped
1 lb boneless, skinless chicken breasts, diced
Salt and pepper, to taste
1 teaspoon garlic powder
2 cups chicken broth
1 cup milk
8 oz penne pasta
2 cups baby spinach
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
Chopped fresh parsley, for garnish (optional)
Instructions
- In a large skillet or pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
- Season the diced chicken breasts with salt, pepper, and garlic powder. Add the seasoned chicken to the skillet with the bacon grease. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth, milk, and penne pasta. Bring to a boil, then reduce the heat to low and simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
- Stir in the cooked chicken, crispy bacon, baby spinach, shredded cheddar cheese, and grated Parmesan cheese. Cook for an additional 2-3 minutes, until the cheese is melted and the spinach is wilted.
- Garnish with chopped fresh parsley, if desired. Serve hot and enjoy!
Notes
For a spicier version, add red pepper flakes or a dash of hot sauce.
Substitute penne with your favorite pasta shape if desired.
