Description

This creamy One Pot French Onion Pasta combines the rich flavors of caramelized onions, garlic, and melted cheese inspired by French onion soup. Made with minimal ingredients in just one pot, it’s a comforting, savory dish that’s perfect for any weeknight dinner. The pasta is cooked right in the flavorful broth, making for an easy, satisfying meal with less cleanup.

Ingredients

3 tablespoons unsalted butter

2 large onions, thinly sliced

3 cloves garlic, minced

1 teaspoon sugar

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

3 cups beef broth (or vegetable broth for vegetarian option)

1 cup water

12 ounces pasta (fettuccine, linguine, or spaghetti work well)

1/2 cup heavy cream

1 cup shredded Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Caramelize the Onions: In a large pot, melt butter over medium heat. Add onions and sugar, and cook for 15-20 minutes until golden brown and caramelized.
  2. Add Garlic and Seasonings: Stir in minced garlic, thyme, salt, and pepper, cooking for 1-2 minutes until fragrant.
  3. Add Liquid and Pasta: Pour in beef broth and water, scraping the pot to deglaze. Add pasta, ensuring it is submerged in the liquid. Bring to a boil.
  4. Cook the Pasta: Reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
  5. Finish with Cream and Cheese: Stir in heavy cream and Gruyère cheese until melted and creamy. Adjust seasoning with salt and pepper.
  6. Serve: Garnish with chopped parsley and serve hot with crusty bread for an authentic French onion experience.

Notes

For a vegetarian version, substitute beef broth with vegetable broth.

Feel free to use other pasta shapes like penne or rigatoni if you prefer.

Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for 2-3 months. Reheat with extra liquid for the best texture.
