Ingredients
1 lb (450g) ground beef
1 cup uncooked rice (jasmine or long-grain)
2 cups beef broth
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
2 tbsp honey
1 tbsp tomato paste
1 tbsp smoked paprika
1 tsp chili powder
½ tsp cumin
½ tsp onion powder
¼ tsp cayenne pepper (optional, for extra spice)
2 tbsp soy sauce
1 tbsp olive oil
Instructions
- Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion, red bell pepper, and minced garlic. Cook for 3-4 minutes until softened.
- Brown the beef: Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Add seasonings: Stir in smoked paprika, chili powder, cumin, onion powder, cayenne (if using), and tomato paste. Cook for 1 minute.
- Mix in the rice: Add uncooked rice and stir to coat with the spice mixture.
- Simmer: Pour in beef broth, honey, and soy sauce. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, until the rice is tender and the liquid is absorbed.
- Fluff and serve: Let the dish sit for 5 minutes. Fluff the rice with a fork and serve hot.
Notes
For added heat, increase cayenne or add chopped jalapeño.
Brown rice can be substituted, but it requires more liquid and a longer cook time (40-45 minutes).
