Ingredients

12 oz pasta (spaghetti, penne, or your choice)

2 tablespoons olive oil

3 cloves garlic, minced

10 oz fresh spinach, roughly chopped

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional, for serving)

1/4 cup pasta water (reserved)


Instructions

  1. Cook the pasta according to package instructions, reserving 1/4 cup of pasta water before draining. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
  3. Add chopped spinach and cook for 2-3 minutes until wilted.
  4. Combine the cooked pasta with the spinach mixture, adding the reserved pasta water. Toss to combine.
  5. Season with salt and pepper to taste, and serve immediately with grated Parmesan cheese if desired.

Notes

For added protein, stir in cooked chicken, shrimp, or chickpeas.
