Description

Indulge in the irresistible Pecan Upside Down Cake, a moist and sweet dessert with a caramelized pecan topping that’s baked upside down for a delightful treat. Perfect for special occasions or a simple indulgence, this cake features a rich, buttery caramel layer and crunchy pecans that add texture and flavor. Serve warm or at room temperature for a memorable dessert experience.

Ingredients

For the Topping:

1/2 cup unsalted butter

1 cup packed brown sugar

1 cup pecan halves

For the Cake:

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup milk

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Prepare the Topping: Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and cook until bubbly and smooth. Pour into the prepared pan and spread evenly. Arrange the pecan halves on top.
  3. Prepare the Cake Batter: In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, beat the softened butter and sugar until creamy. Add eggs one at a time, beating well after each. Stir in vanilla extract. Gradually add dry ingredients to the butter mixture, alternating with milk. Mix until just combined.
  4. Assemble and Bake: Pour the batter over the pecan topping and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then invert onto a serving plate.

Notes

Ensure butter is softened before mixing for a creamy texture.

Let the cake cool slightly before inverting to avoid sticking.

This cake can be served warm or at room temperature.
