1 cup all-purpose flour

2 large eggs

½ cup milk

½ cup water

¼ teaspoon salt

2 tablespoons melted butter

1 tablespoon sugar (optional, for sweet crepes)

Butter or oil (for cooking)


Instructions

  1. In a large bowl, whisk together flour and eggs.
  2. Gradually add milk and water, stirring to combine. Add salt, melted butter, and sugar (if making sweet crepes). Beat until smooth.
  3. Rest the batter for 30 minutes (optional).
  4. Heat a lightly buttered or oiled skillet over medium heat.
  5. Pour about ¼ cup of batter into the pan and swirl to spread it evenly.
  6. Cook for 1-2 minutes until edges lift and bottom is golden. Flip and cook the other side for 30 seconds to 1 minute.
  7. Repeat with remaining batter and serve with your favorite fillings.

Notes

For softer crepes, resting the batter for 30 minutes is recommended but optional.

You can easily double or triple the recipe for larger servings.
