Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1 can (20 oz) crushed pineapple, drained

8 oz cream cheese, softened

1 cup powdered sugar

1 tub (8 oz) whipped topping, thawed

1/2 cup sweetened shredded coconut (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a 9×9-inch baking dish to form a crust.
  4. Bake for 8-10 minutes, or until golden. Let cool completely.
  5. In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
  6. Gently fold in the whipped topping and drained pineapple until fully combined.
