Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

2 cups uncooked elbow macaroni

1 (14.5-ounce) can diced tomatoes

1 (10.5-ounce) can condensed cream of mushroom soup

1/2 cup sour cream

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, cook ground beef over medium heat until browned. Add onion and garlic, cooking until softened (about 5 minutes). Stir in Italian seasoning, diced tomatoes, salt, and pepper. Simmer for 5 minutes.
  4. In a small bowl, mix cream of mushroom soup and sour cream until smooth.
  5. Layer half the macaroni in the prepared baking dish. Spread the beef mixture over the pasta, followed by the remaining macaroni.
  6. Pour the soup mixture over the casserole and spread evenly. Top with cheddar and mozzarella cheeses.
  7. Bake for 25-30 minutes, or until bubbly and the cheese is melted and golden.
  8. Let cool for 5 minutes before serving.
