Ingredients
4 medium potatoes, peeled and cubed
1 tablespoon oil (coconut or vegetable)
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger, grated
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon chili powder (adjust to taste)
1 teaspoon garam masala
1 large tomato, chopped
1 cup coconut milk
1/2 cup water
Salt to taste
Fresh cilantro for garnish
Instructions
- Heat oil in a large pan over medium heat. Add cumin and mustard seeds, letting them splutter.
- Add chopped onion and sauté until golden brown.
- Stir in garlic and ginger, cooking for another minute until fragrant.
- Add turmeric, coriander, chili powder, and garam masala. Stir well.
- Add chopped tomatoes and cook until softened.
- Toss in cubed potatoes and mix well to coat with spices.
- Pour in coconut milk and water, stirring to combine.
- Cover and let simmer for 15-20 minutes, or until potatoes are tender.
- Season with salt, garnish with fresh cilantro, and serve hot.

Add protein: Chickpeas or tofu make great additions.
