Ingredients
½ cup chocolate protein powder
½ cup almond flour or oat flour
¼ cup unsweetened cocoa powder
¼ teaspoon baking powder
¼ teaspoon salt
¼ cup honey or maple syrup
⅓ cup Greek yogurt or unsweetened applesauce
2 large eggs
1 teaspoon vanilla extract
¼ cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the protein powder, almond flour, cocoa powder, baking powder, and salt.
- In a separate bowl, combine the honey (or maple syrup), Greek yogurt (or applesauce), eggs, and vanilla extract, mixing until smooth.
- Add the wet ingredients to the dry ingredients, stirring until well combined. Fold in the dark chocolate chips if using.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out mostly clean (a few crumbs are okay for fudgy brownies).
- Allow the brownies to cool in the pan before cutting into squares.
Notes
For a vegan version, substitute the eggs with flax eggs and use plant-based yogurt.
Ensure not to overbake for the best fudgy texture.
Store leftovers in an airtight container for up to a week or freeze for longer storage.
