Ingredients

For the Pumpkin Cookies:

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 cup pumpkin puree

1 large egg

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Prepare the Cookie Dough:
    • In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
    • In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add pumpkin puree, egg, and vanilla extract, and beat until well combined.
    • Gradually mix in the dry ingredients until just combined.
  3. Bake the Cookies:
    • Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until edges are lightly golden and centers are set.
    • Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Cream Cheese Frosting:
    • Beat softened cream cheese and butter until smooth and creamy.
    • Gradually add powdered sugar, one cup at a time, beating well after each addition.
    • Stir in vanilla extract. Add milk as needed for desired consistency.
  5. Frost the Cookies:
    • Once cookies are completely cool, spread a generous amount of frosting on each.

Notes

Ensure cookies are fully cooled before frosting to prevent melting.

For a festive touch, sprinkle a pinch of cinnamon or nutmeg over the frosting.

Store in an airtight container in the refrigerator for up to 5 days. Freeze unfrosted cookies for up to 3 months.
