Ingredients
1 lb ground beef (or turkey)
1 small onion, diced
2 cloves garlic, minced
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 cup beef or vegetable broth
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra heat)
1 tablespoon olive oil
Optional toppings: shredded cheese, sour cream, chopped green onions, avocado
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté for about 2 minutes until fragrant.
- Add ground beef (or turkey) and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.
- Stir in chili powder, cumin, paprika, salt, black pepper, and cayenne pepper. Cook for 1 minute to toast the spices.
- Add drained beans, diced tomatoes, tomato sauce, and broth. Stir well to combine.
- Bring to a simmer and let cook for 15-20 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary.
- Serve hot with your favorite toppings.
Notes
For a thicker chili, let it simmer longer or mash some of the beans.
For a milder version, omit cayenne pepper and use mild chili powder.
Make it vegetarian by substituting meat with extra beans, lentils, or plant-based crumbles.
