Ingredients

1 cup butter, softened

1 cup brown sugar

1 cup granulated sugar

2 tsp vanilla extract

2 eggs

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

2 cups rolled oats

2 cups Rice Krispie cereal

12 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs and vanilla extract to the butter mixture, and mix until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats, Rice Krispie cereal, and chocolate chips until evenly distributed.
  7. Use a cookie scoop to drop dough balls onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 9-10 minutes, or until the edges are light golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use softened butter instead of melted butter to avoid overly flat cookies.

You can customize the recipe by adding nuts or dried fruit if desired.

Chilling the cookie dough for 30 minutes before baking can help reduce spreading.
