Description

Savory Roasted Sweet Potatoes with Garlic and Parmesan, a comforting and gourmet side dish that balances caramelized sweetness with salty, herby flavors.


Ingredients

2 sweet potatoes, peeled and sliced

2 teaspoons minced garlic

1 tablespoon olive oil

2 tablespoons butter, melted

4 tablespoons grated Parmesan cheese

1/2 teaspoon garlic salt

1/2 teaspoon fresh cracked pepper

1/2 teaspoon Italian seasoning

Fresh thyme, for garnish


Instructions

  1. Preheat the oven to 400ºF (200ºC).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a large resealable bag, combine sweet potato slices, minced garlic, olive oil, melted butter, garlic salt, pepper, Parmesan, and Italian seasoning. Shake well to coat evenly.
  4. Lightly butter a baking dish and arrange the coated sweet potatoes in a spiral pattern.
  5. Sprinkle fresh thyme over the top and additional Parmesan if desired.
  6. Roast in the preheated oven for 30-35 minutes, checking towards the end to avoid burning.
  7. Remove from oven and serve immediately, garnished with extra fresh thyme if desired.

Notes

Swap Parmesan with feta for a tangier flavor.

Add cayenne pepper for a spicier version.

Use rosemary instead of thyme for a different herb flavor.

Store leftovers in an airtight container for up to 3 days.
