Ingredients

1 package Stove Top stuffing mix (or more if desired)

1 whole rotisserie chicken, cooked and shredded

1 ½ cups water or chicken broth

¼ cup butter

3 stalks celery, diced

1 onion, diced

1 can cream of chicken soup

½ can cream of mushroom soup

8 ounces sour cream

Salt and pepper to taste


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking pan with cooking spray.
  2. Prepare Stuffing: Bring the water (or chicken broth) to a boil. Add the stuffing mix, remove from heat, cover, and let sit. Fluff with a fork when done.
  3. Sauté Vegetables: In a skillet, melt the butter over medium heat. Cook the diced onion and celery until softened, about 5-7 minutes.
  4. Mix Soups and Sour Cream: Combine the cream of chicken soup, cream of mushroom soup, and sour cream in a bowl until smooth.
  5. Assemble Casserole: Place the shredded chicken in the baking dish. Layer with cooked onions and celery, season with salt and pepper, spread with the soup mixture, and top with stuffing mix.
  6. Bake: Bake for 1 hour, or until bubbly and browned. Allow to cool slightly before serving.

Notes

Advance Preparation: Assemble the casserole up to 24 hours in advance and refrigerate before baking.

Substitutions: Greek yogurt can replace sour cream, and any cooked chicken can substitute for rotisserie chicken.
