1/2 cup sour cream
1/2 cup heavy cream

3 cups peeled and chopped apples (about 3–4 apples)
1/2 cup granulated sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup water
Salted Caramel Sauce:
1 cup granulated sugar
6 tbsp unsalted butter, cut into pieces
1/2 cup heavy cream
1 tsp sea salt
Instructions
- Prepare the Crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, granulated sugar, and melted butter. Press firmly into a 9-inch springform pan. Bake for 10 minutes and cool.
- Make the Cheesecake Filling: Beat cream cheese, granulated sugar, and brown sugar until smooth. Add eggs one at a time, then mix in vanilla extract, sour cream, and heavy cream. Pour over cooled crust.
- Bake the Cheesecake: Place springform pan in a larger dish filled with hot water halfway up the sides. Bake for 55-65 minutes until set. Cool in oven with door cracked, then refrigerate for at least 4 hours.
- Prepare the Apple Topping: Cook apples, granulated sugar, cinnamon, nutmeg, and water in a saucepan until tender and thickened. Cool to room temperature.
