Description

Ingredients

1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

2 tbsp soy sauce

1 tbsp cornstarch

1 tbsp vegetable oil

4 scallions, cut into 2-inch pieces

3 cloves garlic, minced

1 tbsp ginger, minced

2 tbsp oyster sauce

1 tbsp soy sauce (extra for the sauce)

1 tsp sesame oil

1/4 tsp black pepper

1/4 cup chicken broth or water


Instructions

  1. Marinate the Chicken:
    • Mix chicken pieces with 2 tbsp soy sauce and cornstarch. Marinate for 10-15 minutes.
  2. Heat the Pan:
    • Heat vegetable oil in a skillet or wok over medium-high heat.
  3. Cook the Chicken:
    • Stir-fry marinated chicken for 5-6 minutes until browned and cooked through. Set aside.
  4. Cook the Aromatics:
    • In the same skillet, stir-fry scallions, garlic, and ginger for 1-2 minutes until fragrant.
  5. Prepare the Sauce:
    • Combine oyster sauce, soy sauce, sesame oil, black pepper, and chicken broth or water in a small bowl.
  6. Combine and Finish:
    • Return chicken to the skillet, add sauce, and stir-fry for 2-3 minutes until coated.
  7. Serve:
    • Serve hot over steamed rice or noodles.

For added heat, include red pepper flakes or sriracha.
