Ingredients

2 tablespoons olive oil

2 cloves garlic, minced

1/4 cup fresh lemon juice (about 1 large lemon)

1 tablespoon lemon zest

1/4 cup capers, drained

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons unsalted butter

2 tablespoons chopped fresh parsley (optional)


Instructions

  1. Heat the olive oil in a small skillet or saucepan over medium heat.

  2. Add the minced garlic and sauté for about 30 seconds until fragrant, but not browned.

  3. Stir in the fresh lemon juice, lemon zest, capers, salt, and pepper. Let the mixture simmer for 2–3 minutes to allow the flavors to blend.

  4. Reduce the heat to low and whisk in the butter until melted and the sauce thickens slightly.

  5. Remove from heat and stir in fresh parsley, if desired.

  6. Serve warm over grilled fish, chicken, pasta, or roasted vegetables.

Notes

This sauce can be stored in the fridge for up to 3 days. Reheat gently over low heat, adding a splash of water or extra lemon juice to loosen it up if needed.

For a different flavor twist, try substituting the capers with chopped green olives if you prefer.
