Ingredients

1 pound beef stew meat, cubed

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

4 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

12 ounces pasta (penne or rotini work well)

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a skillet over medium-high heat and sear beef cubes until browned. Transfer to slow cooker.
  2. In the same skillet, sauté garlic for 30 seconds. Add beef broth, deglazing the pan, and pour into the slow cooker.
  3. Stir in Italian seasoning and red pepper flakes (if using). Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  4. Stir in heavy cream and Parmesan cheese 30 minutes before serving. Mix until cheese melts and sauce is creamy.
  5. Cook pasta according to package instructions. Drain and add to the slow cooker, mixing to coat with sauce.
  6. Serve hot, garnished with fresh parsley.

Notes

To thicken the sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the sauce during the last 30 minutes of cooking.

Store leftovers in an airtight container for up to 3 days in the fridge or 2 months in the freezer.
