Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz (three 8 oz packages) cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1 cup milk chocolate chips
1 cup mini marshmallows
4 graham crackers, broken into pieces
Instructions
- Prepare the Crust:
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the pan. Bake for 10 minutes. Remove and let cool.
- Make the Cheesecake Filling:
- In a large bowl, beat cream cheese and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and vanilla extract until smooth.
- Assemble the Cheesecake:
- Pour the cheesecake filling over the cooled crust in the springform pan.
- Bake in preheated oven for 50-60 minutes until the center is set with a slight jiggle.
- Add the Topping:
- Remove cheesecake from oven and sprinkle evenly with chocolate chips, mini marshmallows, and graham cracker pieces.
- Return to oven for 5-7 minutes until marshmallows are lightly golden.
- Cool and Serve:
- Let cheesecake cool completely in the pan on a wire rack.
- Refrigerate for at least 4 hours or overnight to set.
- Remove from springform pan, slice, and serve chilled.
