Description

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

24 oz (three 8 oz packages) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 cup sour cream

1 teaspoon vanilla extract

1 cup milk chocolate chips

1 cup mini marshmallows

4 graham crackers, broken into pieces


Instructions

  1. Prepare the Crust:
    • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
    • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the pan. Bake for 10 minutes. Remove and let cool.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat cream cheese and granulated sugar until smooth.
    • Add eggs one at a time, mixing well after each addition.
    • Stir in sour cream and vanilla extract until smooth.
  3. Assemble the Cheesecake:
    • Pour the cheesecake filling over the cooled crust in the springform pan.
    • Bake in preheated oven for 50-60 minutes until the center is set with a slight jiggle.
  4. Add the Topping:
    • Remove cheesecake from oven and sprinkle evenly with chocolate chips, mini marshmallows, and graham cracker pieces.
    • Return to oven for 5-7 minutes until marshmallows are lightly golden.
  5. Cool and Serve:
    • Let cheesecake cool completely in the pan on a wire rack.
    • Refrigerate for at least 4 hours or overnight to set.
    • Remove from springform pan, slice, and serve chilled.
