Description

Ingredients

1 1/2 cups graham cracker crumbs (gluten-free if needed)

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

2 full-size chocolate bars, broken into pieces (like Hershey’s)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Prepare Cookie Dough Base: In a medium bowl, whisk together graham cracker crumbs, flour, baking powder, and salt. In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Stir in the egg and vanilla extract. Gradually mix in the dry ingredients until combined.
  3. Assemble Bars: Press half of the dough mixture into the bottom of the prepared pan. Sprinkle chocolate chips and broken pieces of chocolate bars over the dough. Top with mini marshmallows. Crumble and scatter the remaining dough over the marshmallows.
  4. Bake: Bake for 25-30 minutes or until the top is golden brown. Cool completely in the pan before lifting out and cutting into squares.

Notes

For an extra gooey texture, increase the amount of mini marshmallows or add a few more pieces of chocolate.

To prevent marshmallows from burning, crumble the top dough layer gently and cover with aluminum foil if needed.

For a gluten-free version, use gluten-free graham cracker crumbs.
