Description

Snickerdoodle Banana Bread is the perfect blend of moist banana bread and a sweet cinnamon-sugar topping. A delightful twist on a classic, this recipe is easy to make and ideal for breakfast, a snack, or dessert. Use up overripe bananas for a treat the whole family will love.

Ingredients

For the Bread:

3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon vanilla extract

1 large egg

1 cup granulated sugar

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

For the Topping:

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mix the mashed bananas, melted butter, vanilla extract, and egg until smooth.
  3. Stir the granulated sugar into the wet mixture.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Pour the batter into the prepared pan, spreading it evenly.
  7. In a small bowl, combine the topping ingredients (sugar and cinnamon). Sprinkle evenly over the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ripe Bananas: The riper the bananas, the sweeter and more flavorful the bread.

Mix-ins: Add nuts, chocolate chips, or spices for variations.

Freezing: This bread freezes beautifully; just slice and wrap for easy grab-and-go treats.
