Description

Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup light brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 1/2 cups old-fashioned oats

Optional: 1/2 cup raisins, chocolate chips, or chopped nuts


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Stir in the oats and any optional mix-ins like raisins, chocolate chips, or nuts.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To keep cookies soft, store them in an airtight container with a slice of bread.

For added flavor, consider adding a pinch of nutmeg or substituting half the butter with coconut oil.

If freezing the dough, shape into balls before freezing, and bake directly from frozen.
