Ingredients

1/2 cup unsalted butter, softened

1/2 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Use a fork to press each dough ball in a crisscross pattern to slightly flatten.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overbake! For soft, chewy cookies, remove them from the oven as soon as the edges turn golden.

Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze the cookies for up to 3 months.

Optionally, you can chill the dough for 30 minutes before baking to help prevent excessive spreading and make thicker cookies.
