Ingredients

1/2 cup butter or margarine, melted

1 1/2 cups sugar

3 tablespoons flour

3 eggs, beaten

1 pinch salt

1 teaspoon vanilla extract

1 cup buttermilk

1 deep dish pie shell (homemade or store-bought)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, beat together the melted butter and sugar until light and fluffy.
  3. Add the beaten eggs and vanilla extract to the mixture, and beat until well combined.
  4. Sift the flour and salt together, then gradually add to the batter, alternating with the buttermilk. Beat until the mixture is smooth and fully incorporated.
  5. Pour the filling into the deep dish pie shell.
  6. Bake the pie at 400°F for 10 minutes. Then, reduce the oven temperature to 350°F (175°C) and bake for an additional 50-60 minutes, or until the pie is golden brown and a knife inserted into the center comes out clean.
  7. Allow the pie to cool slightly. It’s best served warm, though it can also be enjoyed at room temperature or chilled.

Notes

Use fresh buttermilk for the best flavor.

If you don’t have buttermilk, create a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and let it sit for 5 minutes.

This pie can be made a day in advance and stored in the refrigerator.
