Ingredients
2 lbs fresh collard greens, washed and chopped
1 lb smoked turkey leg or wing
1 medium onion, chopped
3 cloves garlic, minced
6 cups chicken broth
1 tbsp apple cider vinegar
1 tsp red pepper flakes
1/2 tsp black pepper
Salt to taste
Instructions
- Cook the Smoked Turkey: In a large pot, bring chicken broth to a boil. Add the smoked turkey leg or wing, reduce to a simmer, cover, and cook for about 30-40 minutes to release the smoky flavor.
- Add Collard Greens and Seasoning: Add chopped collard greens, onion, garlic, apple cider vinegar, red pepper flakes, and black pepper to the pot. Stir to combine.
- Simmer: Cover the pot and let the greens simmer on low for 1-2 hours, stirring occasionally, until the greens are tender. Adjust seasoning and salt to taste before serving.
Notes
Fresh vs. Frozen: While fresh collard greens are preferred for their flavor and texture, frozen greens can be used if needed.
Adjusting Heat: To make the dish milder, reduce or omit the red pepper flakes.
Serving Suggestions: Best served with cornbread, fried chicken, or black-eyed peas.
