Ingredients
2 cups cooked chicken, shredded
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels
1 red bell pepper, diced
1 avocado, sliced
1 cup romaine lettuce, chopped
1/4 cup red onion, diced
1/2 cup shredded cheddar cheese
4 large flour tortillas
Southwest Sauce:
1/4 cup ranch dressing
2 tbsp salsa
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
- In a small bowl, mix together ranch dressing, salsa, chili powder, cumin, garlic powder, salt, and pepper to make the southwest sauce. Set aside.
- In a large bowl, combine shredded chicken, black beans, corn, diced red bell pepper, avocado, chopped romaine lettuce, red onion, and shredded cheddar cheese.
- Drizzle the southwest sauce over the chicken and vegetable mixture and toss to coat evenly.
- Lay out the flour tortillas and spoon the chicken mixture onto the center of each tortilla.
- Fold in the sides of the tortilla, then roll it up tightly to form the wrap.
- Slice the wraps in half and serve immediately.
