Ingredients

2 cups cooked chicken, shredded

1/2 cup black beans, drained and rinsed

1/2 cup corn kernels

1 red bell pepper, diced

1 avocado, sliced

1 cup romaine lettuce, chopped

1/4 cup red onion, diced

1/2 cup shredded cheddar cheese

4 large flour tortillas

Southwest Sauce:

1/4 cup ranch dressing

2 tbsp salsa

1 tsp chili powder

1/2 tsp cumin

1/2 tsp garlic powder

Salt and pepper to taste


Instructions

  1. In a small bowl, mix together ranch dressing, salsa, chili powder, cumin, garlic powder, salt, and pepper to make the southwest sauce. Set aside.
  2. In a large bowl, combine shredded chicken, black beans, corn, diced red bell pepper, avocado, chopped romaine lettuce, red onion, and shredded cheddar cheese.
  3. Drizzle the southwest sauce over the chicken and vegetable mixture and toss to coat evenly.
  4. Lay out the flour tortillas and spoon the chicken mixture onto the center of each tortilla.
  5. Fold in the sides of the tortilla, then roll it up tightly to form the wrap.
  6. Slice the wraps in half and serve immediately.

Notes

For optimal freshness, assemble the wraps just before serving. If making ahead, store the filling and sauce separately and combine before serving.
