Ingredients

For Cookies:

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 3/4 cups all-purpose flour

1 1/2 teaspoons cream of tartar

1/2 teaspoon baking soda

1/2 teaspoon salt

For Spice Coating:

1/4 cup granulated sugar

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
  3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. In a small bowl, combine the sugar, cinnamon, nutmeg, and cloves for the spice coating.
  5. Roll the cookie dough into 1-inch balls, then roll each ball in the spice coating until fully covered. Place the coated dough balls 2 inches apart on the prepared baking sheet.
  6. Bake for 9-11 minutes, or until the edges are set and the tops are crackled. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra chewiness, chill the dough for 30 minutes before baking.

Adjust spices to taste; if you prefer a milder flavor, reduce the nutmeg and cloves slightly.

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 3 months.
