Ingredients
1 medium butternut squash, peeled and cubed
2 medium sweet potatoes, peeled and cubed
1 large onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (adjust to taste)
Salt and pepper, to taste
4 cups vegetable broth
1 cup coconut milk (or heavy cream)
Instructions
- Roast the Vegetables: Preheat your oven to 400°F (200°C). Toss the cubed butternut squash, sweet potatoes, and diced onion with olive oil, cumin, cinnamon, smoked paprika, cayenne pepper, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and slightly caramelized.
- Sauté the Garlic: In a large pot over medium heat, sauté the minced garlic in a bit of olive oil for 1-2 minutes until fragrant.
- Combine and Simmer: Add the roasted vegetables to the pot along with the vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Blend the Soup: Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer to a blender in batches.
- Add Coconut Milk: Stir in the coconut milk (or cream) and adjust seasonings as needed. Heat through for 2-3 minutes.

Notes
For added spice, increase the cayenne pepper or add hot sauce when serving.
This soup can be stored in the refrigerator for 4-5 days or frozen for up to 3 months.
To reheat, warm on the stove over medium heat, adding broth or water as necessary to reach desired consistency.
