Description

Indulge in a refreshing Strawberry Jello Lasagna, a delightful no-bake summer dessert that layers creamy cheesecake, fresh strawberries, and a crunchy Golden Oreo crust. Perfect for gatherings, this dessert is not only visually stunning but also incredibly easy to prepare. Enjoy a burst of strawberry flavor in every delicious slice!

Ingredients

Crust and Topping:

48 Golden Oreo cookies (ground whole with the filling)

½ cup unsalted butter, melted

1 oz. freeze-dried strawberries, coarsely crushed

Strawberry Jello Filling:

32 oz. fresh strawberries, sliced

1 (3 oz.) pack strawberry-flavored gelatin (like Jell-O)

Whipped Cream:

3 cups heavy whipping cream

¾ cup powdered sugar

1 teaspoon vanilla extract

Cream Cheese Filling:

12 oz. cream cheese, room temperature

½ cup unsalted butter, room temperature

1 cup powdered sugar

1 teaspoon vanilla extract

Instructions

  1. Make the Strawberry Filling: In a large saucepan, combine sliced strawberries and sprinkle with the dry strawberry Jello powder. Heat over medium-low for 2-3 minutes until the gelatin dissolves. Set aside to cool.
  2. Prepare the Crust: Pulse the Golden Oreos into fine crumbs in a food processor. Mix with melted butter and press into the bottom of a 9 x 13 inch dish. Chill in the fridge or freezer.
  3. Make Whipped Cream: Whip the heavy cream and vanilla until soft peaks form. Add powdered sugar and continue whipping until stiff peaks form. Set aside.
  4. Prepare Cream Cheese Filling: Cream together butter, cream cheese, and vanilla, then mix in powdered sugar. Fold in whipped cream.
  5. Assemble the Lasagna: Spread half of the cream cheese mixture over the crust, freeze for 10 minutes, then spoon the strawberry filling over it. Freeze for another 10-15 minutes until set. Top with the remaining cream cheese mixture and refrigerate for at least 4 hours or overnight.
  6. Add Topping: Before serving, mix reserved Oreo crumbs with crushed freeze-dried strawberries and sprinkle over the top.

Notes

For best flavor, use fresh strawberries.

This dessert can be made ahead of time and stored in the fridge for 5-6 days.

Feel free to substitute Golden Oreos with graham crackers or another cookie of your choice.
