Ingredients
1 1/2 cups rolled oats
1 1/4 cups all-purpose flour (or gluten-free flour for a GF option)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, melted
1 teaspoon vanilla extract
2 cups fresh strawberries, hulled and diced
2 tablespoons cornstarch
1 tablespoon lemon juice
1/3 cup granulated sugar (for strawberries)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving overhang for easy removal.
- Mix oats, flour, 1/2 cup granulated sugar, brown sugar, baking soda, and salt in a large bowl.
- Add melted butter and vanilla; stir until crumbly. Reserve 1/2 cup for topping.
- Press the remaining mixture into the prepared pan for the crust.
- Toss strawberries with cornstarch, lemon juice, and 1/3 cup sugar. Spread over the crust.
- Sprinkle reserved crumble mixture on top.
- Bake for 35–40 minutes, until golden brown and bubbly.
- Cool completely before slicing into squares.
Notes
Use gluten-free flour for a GF option.
For added crunch, mix in nuts like pecans or almonds.
Store leftovers in an airtight container for up to 1 week in the fridge.
