Ingredients
For the Cookie Bars:
2 ¾ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
½ teaspoon almond extract (optional)
1 tablespoon milk
For the Frosting:
½ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2–3 tablespoons milk
Food coloring (optional)
Sprinkles for topping
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and almond extract (if using), and beat until combined.
- Gradually add the dry ingredients, mixing until just incorporated. Stir in 1 tablespoon of milk to help bind the dough; it should be soft.
- Press the dough evenly into the prepared baking pan. Bake for 15-20 minutes, or until the edges are lightly golden but the center remains soft. Be careful not to overbake!
- While the bars cool, prepare the frosting. Beat the butter until creamy, then gradually add the powdered sugar. Mix in the vanilla and enough milk to achieve a spreadable consistency. If desired, add food coloring.
- Once the bars are completely cool, spread the frosting evenly over the top. Finish with sprinkles for decoration.
- Cut into squares and enjoy!
Notes
For best results, do not overbake the bars; they should be soft in the center.
