Description

Ingredients

1 cup brown sugar, packed

½ cup granulated sugar

1 cup vegetable oil

4 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

1 cup chopped pecans

½ cup whole pecans (for topping, optional)


Instructions

  1. Preheat Oven – Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. Mix Sugars & Oil – In a large bowl, whisk together brown sugar, granulated sugar, and vegetable oil until smooth.
  3. Add Eggs & Vanilla – Mix in eggs one at a time, followed by vanilla extract.
  4. Prepare Dry Ingredients – In a separate bowl, whisk together flour, baking powder, and salt.
  5. Combine Wet & Dry – Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in Pecans – Gently fold in chopped pecans to distribute evenly.
  7. Pour & Decorate – Pour batter into the prepared baking dish and smooth the top. Arrange whole pecans on top if desired.
  8. Bake – Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool & Serve – Let cool before slicing into squares. Serve warm or at room temperature.

Notes

For extra moisture, slightly underbake by 1-2 minutes.

Substitute melted butter for oil for a richer, denser texture.
