Ingredients

1 1/2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

1/4 cup brown sugar

1/4 cup granulated sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup heavy cream

2 large eggs

1 package (15 count) mini phyllo shells

Whipped cream, for topping


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and place the mini phyllo shells on a baking sheet.
  2. Prepare the Filling: In a large mixing bowl, combine mashed sweet potatoes, brown sugar, granulated sugar, ground cinnamon, ground nutmeg, ground ginger, salt, vanilla extract, heavy cream, and eggs. Mix until smooth and well combined.
