1/4 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup heavy cream
2 large eggs
1 package (15 count) mini phyllo shells
Whipped cream, for topping
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and place the mini phyllo shells on a baking sheet.
- Prepare the Filling: In a large mixing bowl, combine mashed sweet potatoes, brown sugar, granulated sugar, ground cinnamon, ground nutmeg, ground ginger, salt, vanilla extract, heavy cream, and eggs. Mix until smooth and well combined.
- Fill the Phyllo Shells: Spoon the sweet potato mixture into the mini phyllo shells, filling each shell almost to the top.
- Bake: Bake the filled phyllo shells for 20-25 minutes, or until the filling is set and the edges of the shells are golden brown.
- Cool and Serve: Allow the bites to cool slightly on the baking sheet before transferring to a serving platter. Top with whipped cream before serving.
Notes
Make Ahead: Prepare the filling in advance and refrigerate. Assemble and bake just before serving for the best texture.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven before serving.
Variations: You can experiment with different spices or add a pecan topping for extra crunch.
