Description

Taco Casserole with Tortillas is a comforting, cheesy dish made with seasoned ground beef, tortillas, black beans, corn, and salsa. It’s layered with melty Mexican blend cheese and baked to perfection, making it the ultimate crowd-pleasing dinner for taco night or any family meal. Easy to make and customizable with your favorite toppings, this casserole is a delicious twist on traditional tacos.

Ingredients

1 lb ground beef

1 packet taco seasoning mix

1/2 cup water

1 can black beans, drained and rinsed

1 can corn, drained

1 can diced tomatoes (10 oz)

1 cup salsa

6 small flour tortillas, cut into halves or quarters

2 cups shredded Mexican blend cheese

Optional toppings: chopped green onions, sour cream, diced tomatoes, sliced jalapeños, fresh cilantro

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat, then add taco seasoning mix and water. Simmer for 2-3 minutes.
  3. Prepare the Filling: Stir in black beans, corn, diced tomatoes, and salsa. Mix well and simmer for another 2-3 minutes.
  4. Assemble the Casserole: Grease a 9×13-inch baking dish. Layer the bottom with tortilla pieces, followed by half the beef mixture, and 1 cup of shredded cheese. Repeat with another layer of tortillas, remaining beef mixture, and the final cup of cheese.
  5. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  6. Serve: Garnish with optional toppings and serve warm.

Notes

For a spicier casserole, add sliced jalapeños into the layers or top the casserole with them before serving.

You can substitute ground turkey or chicken for the ground beef for a leaner option.

This recipe can be made ahead of time and stored in the refrigerator for up to 24 hours before baking.
