Ingredients
½ cup butter
½ cup light corn syrup
½ cup light brown sugar
½ cup white sugar
½ cup sweetened condensed milk
1 teaspoon vanilla extract
Instructions
- Butter an 8-inch square pan or a 9×5-inch loaf pan for thicker caramels. Optionally, line the pan with foil and butter the foil for easy removal.
- In a large microwave-safe bowl, melt butter (about 1 minute in the microwave).
- Stir in the corn syrup, brown sugar, white sugar, and sweetened condensed milk until the sugar begins to dissolve.
- Microwave the mixture on high for 3 minutes and 5–15 seconds. Stir, scrape down the bowl’s sides, and return to the microwave.
- Microwave again for another 3 minutes and 5–15 seconds. Stir in the vanilla extract.
- Pour the caramel mixture into the prepared pan and spread evenly.
- Allow the caramels to cool and set at room temperature for several hours. Once firm, cut into squares and wrap in waxed paper.
