Ingredients
1 cup creamy peanut butter
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, beat together peanut butter, granulated sugar, brown sugar, and softened butter until smooth and creamy.
- Add the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together baking soda, salt, and flour. Gradually add this to the wet ingredients, mixing until a soft dough forms.
- Roll tablespoons of dough into balls and place them on the baking sheet about 2 inches apart.
- Use a fork to press down on each dough ball, creating a crisscross pattern.
- Bake for 10-12 minutes, until edges are set but centers are slightly undercooked for a soft texture.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra chewiness, underbake slightly and allow cookies to cool on the sheet.
Substitute almond butter for a different nutty flavor, or add chocolate chips for a chocolate-peanut butter combo.
