Ingredients

1 lb beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 onion, chopped

2 cloves garlic, minced

4 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

2 carrots, sliced

2 potatoes, diced

1 cup green beans, chopped

1 cup corn (fresh, frozen, or canned)

1 cup peas (fresh, frozen, or canned)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

Instructions

  1. Brown the Beef: In a large pot, heat olive oil over medium-high heat. Add beef and brown on all sides (about 5-7 minutes). Remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté onion and garlic for 2-3 minutes until fragrant.
  3. Add Liquids & Meat: Pour in beef broth and diced tomatoes, then return the beef to the pot.
  4. Add Vegetables: Stir in carrots, potatoes, green beans, corn, and peas.
  5. Season & Simmer: Add thyme, oregano, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45-60 minutes until beef and vegetables are tender.
  6. Final Touches: Remove the bay leaf before serving. Enjoy warm with crusty bread!

Notes

Customize It: Add bell peppers, zucchini, or spinach for extra nutrition.

Make It Spicy: Add red pepper flakes or chopped jalapeño.

Swap the Meat: Try ground beef or shredded roast beef instead of stew meat.

Thicken the Soup: Mash some potatoes or add a cornstarch slurry for a thicker consistency.
