Ingredients

2 tablespoons butter

1 small onion, chopped

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups chicken broth

1 cup heavy cream

1 (9 oz) package cheese tortellini

1 teaspoon dried basil

1/2 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil, for garnish (optional)


Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the crushed tomatoes, chicken broth, dried basil, and oregano. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Reduce the heat to low and stir in the heavy cream. Season with salt and pepper to taste.
  5. Add the cheese tortellini and cook according to the package instructions, about 5-7 minutes, until tender.

For a vegetarian option, swap chicken broth with vegetable broth.

To freeze, prepare the tomato soup base without the tortellini and cream, adding them when reheating.
