For the White Chocolate Mousse:

4 oz white chocolate, chopped

1 cup heavy cream

2 tablespoons granulated sugar


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Prepare the Cake Batter: Whisk together flour, baking powder, baking soda, and salt. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Mix in cocoa powder and vanilla extract. Gradually add the flour mixture alternately with milk, mixing until just combined.
  3. Bake the Cake: Divide batter between pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  4. Prepare the Mousse Layers:
    • For Dark Chocolate Mousse: Melt dark chocolate and let cool slightly. Whip heavy cream and sugar until stiff peaks form, then fold in melted chocolate.
    • For Milk Chocolate Mousse: Melt milk chocolate and let cool slightly. Whip heavy cream and sugar until stiff peaks form, then fold in melted chocolate.
