Ingredients

4 large eggs, room temperature

3/4 cup (150g) granulated sugar

1 tablespoon water

1/2 cup (115g) unsalted butter, melted and cooled

3/4 cup (95g) all-purpose flour

2 cups (500ml) lukewarm milk

2 teaspoons vanilla extract

Powdered sugar, for dusting (optional)


Instructions

  1. Preheat oven to 325°F (160°C). Grease an 8×8-inch baking dish and line it with parchment paper for easy removal.
  2. Separate the eggs into yolks and whites. In a large bowl, beat the egg yolks with the sugar and water until pale and creamy. Gradually add the melted butter and vanilla extract, mixing until smooth.
  3. Sift the flour into the egg mixture and mix until fully combined. Slowly pour in the lukewarm milk, mixing until smooth. The batter will be runny—this is normal.
  4. Beat the egg whites to stiff peaks in a separate bowl. Gently fold the egg whites into the batter, being careful not to deflate them. The batter will remain runny but slightly thicker.
  5. Pour the batter into the prepared baking dish and bake for 45-55 minutes, or until the top is golden and firm. The cake will jiggle slightly in the center.
  6. Let the cake cool completely, then refrigerate for at least 2 hours before slicing into squares. Dust with powdered sugar before serving, if desired.

Notes

The cake may jiggle slightly in the center when it’s done baking due to the custard layer. Let it cool and refrigerate for proper setting.

Customize the flavor by adding citrus zest (like lemon or orange) or almond extract.
