Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup white chocolate chunks or chips
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the white chocolate chunks.
- Using a cookie scoop or tablespoon, scoop the dough into balls and place them onto the prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a softer texture, be careful not to over-mix the dough.
Store cookies in an airtight container at room temperature for up to one week, or freeze for up to three months.
To enjoy warm cookies, briefly heat them in the microwave for 10-15 seconds.
