Description

A delightful and refreshing Mangoberry Salad that captures the essence of fresh fruits and a tangy mango yogurt dressing, perfect for a light lunch or a side dish at any gathering.


Ingredients

Salad:

1 bag spring mix lettuce (about 6 cups)

2 mangoes, peeled and cubed

1 cup fresh blueberries

2 cups fresh strawberries, sliced

½ cup sliced almonds (candied salad-topper almonds recommended)

Dressing:

8 ounces vanilla Greek yogurt (regular yogurt can also be used)

1 Tablespoon lemon juice

One mango, peeled and cubed

1 teaspoon honey

Pinch of salt


Instructions

  1. In a large bowl, toss the spring mix, mangoes, blueberries, and strawberries together.
  2. Top with sliced almonds.
  3. In a blender or food processor, mix together yogurt, lemon juice, mango, honey, and salt.
  4. Blend until smooth, then pour over salad or serve on the side.

Notes

Frozen mangoes can be used if fresh ones are not available. Thaw and strain to remove excess juice to prevent the salad from becoming soggy.

Fresh berries are recommended for the best taste.
