Description

Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade seasoning)

1 can (10 oz) enchilada sauce

1 can (4 oz) diced green chilies

1 cup cooked rice (optional, for extra bulk)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream (for topping)

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste


Instructions

  1. Cook the Beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it apart, until browned (5-7 minutes). Drain excess fat if needed.

  2. Add Onion & Garlic: Add diced onion and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 1 more minute.

  3. Add Seasonings: Stir in taco seasoning, enchilada sauce, and diced green chilies. Simmer for 2-3 minutes, stirring occasionally. Adjust salt and pepper to taste.

  4. Add Rice (Optional): If using rice, stir it in now and cook for 1-2 minutes to warm through.

  5. Smother with Cheese: Sprinkle shredded cheese over the beef mixture. Cover and cook for 2-3 minutes until cheese is melted.

  6. Serve: Top with sour cream and fresh cilantro. Serve with tortilla chips for extra crunch.

Notes

Optional Add-ins: Black beans, refried beans, sliced jalapeños, or sautéed bell peppers can be added for extra flavor and variety.

Rice Substitution: For a low-carb option, substitute regular rice with cauliflower rice.
