Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or homemade seasoning)
1 can (10 oz) enchilada sauce
1 can (4 oz) diced green chilies
1 cup cooked rice (optional, for extra bulk)
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup sour cream (for topping)
Fresh cilantro, chopped (for garnish)
Salt and pepper, to taste

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it apart, until browned (5-7 minutes). Drain excess fat if needed.

Add Onion & Garlic: Add diced onion and cook for 2-3 minutes until softened. Stir in minced garlic and cook for 1 more minute.

Add Seasonings: Stir in taco seasoning, enchilada sauce, and diced green chilies. Simmer for 2-3 minutes, stirring occasionally. Adjust salt and pepper to taste.
