Ingredients
1 package (14 oz) refrigerated pie crusts (2 crusts)
1 cup mixed berries (strawberries, blueberries, raspberries)
¼ cup granulated sugar
4 oz cream cheese, softened
1 egg (for egg wash)
Optional: Powdered sugar for dusting
Instructions
- Preheat Your Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the Filling: In a medium bowl, mix the berries and granulated sugar. In another bowl, beat the softened cream cheese until smooth.
- Roll Out the Pie Crusts: On a lightly floured surface, roll out the pie crusts and cut each crust into 4-6 equal rectangles.
- Assemble the Hand Pies: Place a spoonful of cream cheese in the center of each rectangle and top with a spoonful of the berry mixture. Fold the dough over and press the edges with a fork to seal. Cut small slits on top to allow steam to escape.
- Egg Wash and Bake: In a small bowl, whisk the egg with water for the egg wash. Brush the tops of each hand pie and bake for 20-25 minutes or until golden brown.
- Garnish and Serve: Allow to cool slightly and dust with powdered sugar before serving.
